Yesterday I posted meals 3 to the end of the day which was meal 6 ended by a protein drink. So I thought I'd just show you meal 1 and 2. This will be the same food for 4 weeks apart from one last structured re feed.

So Meal 1

ROLLED Oats 60g with water
I used zero calories, fat and carb honey syrup as you can see.
This is actually my favourite meal when in shred.

I eat this at 8am after 45 minutes of fasted cardio and then a further 45mins just fasted where I shower, get dressed etc and then get Tennison up for school. This all plans in so we can have breakfast together relaxed and fresh.

I would then drop to school and go straight to the gym taking a 200mg caffeine tablet currently.

Are you skinny but fat? 🤚🏾I am apparently ☺️I had a health assessment yesterday and have a good BMI (and the lowest bad cholesterol, sugar levels and disease markers they’d seen in ages #yaykimchi 🙌🏾) But... my muscle tone/fat composition..well not that bad but not that great either 🙄 Apparently kettlebell don’t work unless you actually use them 🤔 who knew?! Well, I did know really because I don’t have the upper body strength I want for indoor climbing which is our family thing that we like to do, so I guess not a big surprise. Anyway apparently I have to go to a Body Pump class which is the opposite of the chilled out, stretchy, yoga I prefer. But same things same results and all that so I’m going to do something..I just don’t know where to fit in gym classes with 2 kids and 2 jobs 💭 Does anyone do these kind of routines at home? I do have a set of Kettlebell so maybe I could work with those 🤔

SIMPLE WAYS TO STAY HEALTHY IN A BUSY LIFE 🐝

During the stressful and busy periods with exams, dissertation, work, driving a million miles per week, housework, walking Alfie, bathing Alfie etc. I honestly lost a little bit of my passion for cooking. Trying to put too much on your plate may cause you to go backwards and for me, I have to focus on one large thing at a time to keep me mentally balanced and happy! .

🍌 Instead, I stuck to basic nutrition to get me through the busy time ahead including:
• Focusing on reaching my 5-a-day
• Made sure lunch and dinner were balanced with carbohydrates, protein and vegetables/ salad
• Took a vitamin D supplement everyday • Stopped drinking alcohol - all together!
• Drank at least 6 glasses of water per day
• And that's it! I didn't set unrealistic goals when they weren't realistic at that time of my life.

🏋🏻‍♀️ At the gym, I went it with the attitude - 'Something is better than nothing!' and the majority of the time I was exhausted before I had even started. So I stuck to light cardio, light weights, fewer reps and made sure to have breaks in-between with lots of water.

☺️ To me, personally, my overall diet had slipped - but I was absolutely fine with that! I was aware of why I felt the way I did e.g busy and stressed, and that it made me want to eat the foods I ate, I had no guilt or worry about my diet whatsoever. I was fully mindful of what I was doing and was perfectly ok with and knew I'd get back on track when I could.

💆🏼‍♀️ Life is full of rollercoasters and we all know what they feel like. For me, it's so so important to give yourself myself a break when I need it most. Don't be so hard on yourself, love yourself enough to listen to your body and mind and do what it is telling you. If you're overwhelmed, cut back on some things you have going on or stop concentrating to much on the non essential things. We can all stay on the right track but it doesn't mean we can't wonder off from time to time, as long as at the end of the day we return back to it. As I've always said, consistency is 🗝️

I söndags var jag igång i köket igen. Denna gången fick det bli ett glutenfritt bröd med sötpotatis, bovetemjöl och havremjöl. Receptet ser ut som följer:
• 200 g sötpotatis (kokt eller ugnsbakad)
• 2 ägg
• 2 dl mandelmjölk (eller annan valfri mjölk)
• 100 g bovetemjöl (ca 2 dl)
• 100 g havremjöl (ca 2 dl)
• 25 g fiberhusk (ca 2 msk)
• 5 g bakpulver (ca 1 tsk)
• ca 1/2 tsk salt
• ca 1 tsk kanel + 1 tsk kardemumma (valfritt men gott!)
• frön till topping (jag hade chia)

Sätt ugnen på 200° varmluft. Koka upp sötpotatis och mosa/vispa till smet (jag bakade en hel potatis i ugnen ca 1 timme och gröpte ur 200g kött), blanda i kryddor i potatissmeten. Vispa äggen med mjölk till fluff. Vänd ner potatismoset med kryddorna i äggmjölken. Tillsätt se torra ingredienserna. Låt svälla i ca 15 min. Klä en brödform (1-1,5 L) med bakplåtspapper. Häll i smeten och toppa med frön (valfritt) och grädda sedan 40-45 min i mitten av ugnen. Kolla med sticka innan du tar ut så brödet är färdiggräddat i mitten ☆

the best things are the most difficult, but this does not mean that they are impossible to achieve! sometimes they only require only more hard work, believe in themselves and having the right perseverance overcoming the obstacles, you can falling, for sure soon or late you can fail, it's a reality nobody is perfect, no all day can be your day, but when you fail you always getting up and try again and  again, you can fail 1000 times if it's neccessary but you never give up until you do it and realize the impossible become possible, learn from your failure, becouse every man of success  as gone through the failures, success is not a way all down, success it's a climb through hell and only a few are able to get out winners of it only with a few scars, but still manage to overcome it, you will not see many friends along this road, indeed many will hate you because you are managing to go beyond where they have failed. but in any case fuck them and continue your way because the winners do not have time to waste with those who do not support them, and they cannot afford to listen to their negative bullshit. see many ask me why you like to motivate and inspire people? well... see many people like to see others on the ground, see them fail, so I like to help them getting up and give them the right motivation neccessary to finding the strenght and discover all tool that there are already inside you, but you need only start working it, for this is important that you have to believe in yourself, with all yourself enough to be the person you want to become and be remembered, maybe it won't happen as fast as you'd like, but if you don't give up and work hard... maybe it won't be today... maube it won't be tomorrow... but a day, your day will come. Vegan Cookie Dough Cheesecake by @nutritionbysam 💛 Recipe:⠀
Ingredient:⠀
BASE⠀
-1/2 cups fresh (pitted) medjool dates⠀
-1/2 cups raw walnuts⠀
-1 tbsp coconut oil⠀
⠀
CACAO & WHITE LAYER⠀
-3 cups raw cashews : soaked for 3 hours (drained)⠀
-1/2 cup coconut oil⠀
-1/2 cup maple syrup⠀
-1/2 cup raw nut milk of choice⠀
-1/2 tsp  pink himalayan salt⠀
-1/2 tsp  vanilla extract⠀
-2 tbsp cacao powder⠀
⠀
COOKIE DOUGH LAYER ⠀
1 1/2 cup ground cashews⠀
4 tbsp + 2 tsp coconut oil melted⠀
1 tsp  vanilla extract⠀
1 tsp pink Himalayan salt⠀
1/2 cup maple syrup⠀
3 tbsp of raw cacao nibs.⠀
⠀
Lets make it! ⠀
Make the cookie dough layer first.⠀
1. In a large mixing bowl add  ground cashews ⠀
(if whole cashews then grind in a blender to form a powder)⠀
2. Next add coconut oil + vanilla extract + Himalayan salt + honey or maple.⠀
3. Combine these into a dough and add cacao nibs.⠀
4. Cover the spring form pan in parchment paper and pat the cookie dough down to cover the bottom.⠀
5. Remove the thin circle shaped cookie dough from the pan but holding it from the parchment paper and putting it in the freezer to form. ⠀
⠀
Make the crust next & filling next. ⠀
1.In a food processor pulse walnuts and cacao, then add dates and coconut oil & pulse until sticky mixture.⠀
2.Lightly grease a spring form pan with coconut oil. Press crust mixture evenly on bottom of pan.⠀
3.In a high speed blender, I use a ninja blender, pulse together all of the white & cacao ingredients EXCEPT CACAO. Pore half of the mixture over the crust and spread evenly.. freeze about 15 minutes.⠀
4.Meanwhile Add cacao to remaining filling and blend until smooth. ⠀
5.Lay the cookie dough over the white layer. once it has started to harden.⠀
6. Pour the cacao mixture over the cooke dough base & freeze 4 hours or overnight.⠀
Defrost in refrigerator when you are ready to serve. ⠀

Ingredients:⠀👇👇 ▪1 small to medium head of cauliflower
▪½ cup unsweetened non-dairy milk
▪½ cup water
▪½ cup all-purpose flour or rice flour*
▪¼ tsp each salt and pepper

Maple Gochujang Glaze:
▪¼ cup gochujang paste
▪3 tbsp maple syrup
▪1 tbsp sesame oil
▪½ tbsp tamari or soy sauce
▪1 tbsp apple cider vinegar
▪1 tbsp minced ginger
▪2 cloves garlic, minced
▪¼ tsp each salt and pepper
▪water to thin (if necessary)
METHOD
1-Preheat oven to 450F (232C) and line two baking sheets with parchment paper. Remove leaves from cauliflower and cut into bite-sized florets.
2-Whisk all batter ingredients together in a mixing bowl, adding water slowly at a time until it achieves the desired consistency— the batter should be pourable, but thick enough to stick on the cauliflower. Dip each floret into the mixture and coat evenly, and shake to remove excess. 
3-Arrange florets on baking sheet (shouldn't be touching) and bake for 25 minutes or until golden brown, then remove from oven.
4-While florets are still baking, whisk together sauce (adding additional water if needed to reach a glaze consistency). Let baking sheet cool slightly (to prevent bottoms from burning) and reduce oven to 400F. Dip each baked floret into the sauce until coated, shake to remove excess, and place back on sheet and bake for an additional 12-15 minutes.
5-Remove from oven and let cool before eating! Serve garnished with chopped scallions+sesame seeds and with dip.
