Little secrete....I reduce my energy intake by 100-200 cals a day during the week so I have a thousand or so to play with on the week end.

An incredible dinner after an unplanned cheat lunch 🙊

I made a peanut Thai noodle dish with salmon 🤤🤤🤤 It’s one of my favorites of all time!

I cooked a pack of whole grain spaghetti noodles (you can use whatever type of noodle you want)
In a separate dish I made the sauce: 
A little under 1/2 cup of peanut butter
Just under 1/4 cup of rice vinegar
Under 1/4 cup low sodium soy sauce
1 tbs of coconut sugar
2 tbs sriracha
1 tbs sesame oil
1 tbs ginger
3 cloves garlic
1/4 cup water
While the noodles were cooking I sautéed carrot & baby Bella mushrooms in coconut oil
I also cooked sushimi grade black pearl salmon in coconut oil with some of the peanut sauce on top
When the noodles were done I combined everything
I topped this dish with chives, sesame seeds, cilantro & a small amount of fresh lime juice 🥰

Mittagessen vom 25.Mai.2019 
Fischliebhaber werden die MKM lieben: Gebratenes Rotbarschfilet!

Zutaten für 2 Protionen 
10 ml Rapsöl 
30 g Tomatenmark 
300 g Kartoffeln 
350 g Rotbarschfilet/ in meinem Fall Alaska Seelachsfilet 
250 ml Gemüsebrühe 
3 g Knoblauch 
50 g Zwieblen
200 g Möhren 
100 g Lauch
80 g Sellerie 
Und so geht's: 
1: ~ Kartoffeln in Salzwasser garen.

2: ~ Währenddessen Knoblauch und Zwiebel schälen und klein hacken.

3: ~ Suppengemüse waschen und ebenfalls in Stücke schneiden.

4: ~ Das Öl zusammen mit dem Knoblauch und der Zwiebel in einem Topf erhitzen.

5: ~ Das Gemüse hinzugeben und alles einige Minuten braten.

6: ~ Anschließend Wasser, Gemüsebrühe und Tomatenmark hinzugeben. Alles für einige  Minuten köcheln lassen. 
7: ~ Den Fisch mit dem Öl in einer Pfanne gut durchbraten und mit etwas Salz, Pfeffer und Zitrone würzen.

Does anyone else ever do kitchen sink pasta? I just took whatever was in the fridge or freezer and tossed it together to make this surprisingly good dinner. 😅
I sautéed a shallot, garlic, baby kale, and some shrimp before I tossed in some mini farfalle pasta and added a dash of soy sauce. I topped it with some shredded parmesan, a bit of lemon juice, and some quartered grape tomatoes!

Preheat the oven to 220 degrees celcius, put the cooked potatoes on a baking tray, smash them down with a potato masher or simply a bowl, add a drizzle of olive oil and a pinch of sea salt on the top of each potato and bake them for about 30 minutes until crispy and lightly browned.

Put them on a plate and top with whatever you want. Just get creative. Today I used vegan pesto and parsley 😍👏🏻💚. .

After church is lunch, right! I was craving a burger with a bun. The best place for that is Burger Lounge. Grass fed burgers, organic veggies and a gluten free bun. Mittagessen vom 20.Mai Mischkostmahlzeit 
Lecker Überbacken: der Brokkoli Auflauf 
Zutaten für 2 Protionen: 
100 g Käse ( 30% Fett )
250 ml Gemüsebrühe 
150 ml kalte Milch ( fettarm, 1,5% )
30 g Vollkornmehl 
300 g Kartoffeln
400 g Brokkoli 
Und so geht's:
1: ~ Kartoffeln schälen, vierteln und gar kochen.

2: ~ Brokkoli in Röschen zerteilen, waschen und in Salzwasser etwa 6 min.kochen. In der Zwischenzeit Gemüsebeühe erwärmen und die Milch hinzugeben.

3: ~ Anschließend das Mehl hinzufügen und mit einem Schneebesen einrühren, bis eine sämige Sauce entsteht.

4: ~ Nach Belieben mit etwas Salz, Pfeffer und Muskatnuss abschmecken.

5: ~ Käse reiben und entweder direkt in der Sauce verühren oder vor dem Backen über den Auflauf streuen.

6: ~ Backofen vorheizen ( Umluft 180°C ) 
7: ~ Kartoffeln in Scheiben schneiden und zusammen mit den gegarten Brokkoliröschen in eine Auflaufform geben. Die Sauce darüber gießen.

8: ~ Den Auflauf im Backofen etwa 30 min.backen.

9: ~ Fertig 😊

And Sunday is #waffles day. What are you having for #breakfast ? Like you already know I really like colors on my plait. I tried to make them low in carbs and rich in protein.
I used:
- 2 organic eggs
- 150 ml coconut milk
- 5 drops of stevia for sweetness - 25g grounded almonds
- 60g dark rye flour
- 85g of protein powder
- 1/2 of tea spoon of pink pitaya, butterfly pea flower, dunaliella salina and blue spirulina and charcoal from @rawnice (those superfoods I used for colors and for they nutritious qualities. You can get yours with 15% off using the code “healthylifestyle_ls15”)
I have put all in the processor till it was a smooth mass, after I have divided it into 4 cups and added the different powders to make it colorful. From those quantities you can get around 4/5 waffles.
Nutritional value of total:
859cal, 66g carbs, 33g fat, 65g protein.

For the cus cus I used:
- few cherry tomatoes
- 50g chickpeas
- 50g of mushroom
- a spoon of capers
- red pepper
- 50g cucumber
- green olives
- pomegranate
- 50g zucchini
- 50g of cuscus.
I cooked all the ingredients on the slow fire till they got soft, then cooled down and added cucumber, olives, pomegranate and cooled all in the fridge.

Ingredients
Dry Ingredients:
2 cups (180g) instant oats (GF if needed) ground into flour
3/4 cup (120 g) white rice flour
1 1/2 cups (130 g) shredded unsweetened coconut ground into flour
1 cup (150g) coconut sugar (or use 150g white sugar)
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
Wet Ingredients:
2/3 cup (160g) apple sauce or 160 g peeled zucchini
1 1/3 cup (320ml) coconut milk canned
4 tbsp (80g) maple syrup or agave syrup
1 tbsp white vinegar or apple cider vinegar
Frosting:
340g (1 medium or 2 small) Japanese sweet potato (they’re white on the inside, don’t use orange sweet potatoes)
2/3 cup (160g) coconut butter (NOT coconut oil or cocoa butter)
1/3 cup (105g) maple syrup or agave syrup
1/2 cup (120ml) coconut milk canned
4 tbsp (40 ml) coconut rum or use more coconut milk.

Instructions
1.Peel the Japanese sweet potato and chop into 1-inch cubes. Boil in water until fork tender. For this recipe, you will need 340 grams of cooked sweet potato (about 1 medium Japanese sweet potato or two small ones).
2.Meanwhile, process the oats and shredded unsweetened coconut in an electric spice/coffee grinder or blender. Then add all dry ingredients into a bowl.
3.Preheat oven to 356F/180C). Grease two 8-inch (20cm) or 7-inch (18cm) cake pans (or springforms) and line the bottoms with parchment paper.
4.Process the wet ingredients in a blender and pour the mixture into the bowl of dry ingredients. Whisk until combined.
5.Divide the batter between the two cake pans and bake for about 30-35min or until a toothpick inserted into the center comes out almost clean. It can still be a little bit crumbly but shouldn't be wet! If you use just one cake pan the baking time will be much longer (about 50-55min) but I definitely recommend 2 cake pans.
6.While the cake is in the oven, you can prepare the frosting. Simply process all frosting ingredients in your blender until completely smooth and creamy.
7.Once the cake has cooled completely, frost it and decorate with coconut flakes. Chill in the fridge for about 3h before serving. Enjoy!
