Sí, yo se que a la hora de cenar todos nos quedamos sin ideas (y sin ganas 😴) para cocinar...pero irte a la cama con el estómago vacío o pedir comida de la calle no son una opción.
Hacerse un wrap no les tomará más de 15min y cuando lo estén disfrutando solo van a auto-agradecerse por la decisión 😋.
Qué deben hacer: colocar los vegetales que tengan en la refri (mis favoritos: espinaca, pimientos, tomate, palta, germinados) y acompañarlos de una proteína (pollo, atún, tofu, lo que prefieran). Ahora, el aliño que le dará esa humedad y saborcito a toda la combinación ES CLAVE ☝🏼 así que aquí les dejo uno súper rico y saludable:
• 1/2 Tz yogurt griego
• 2 cdtas de mostaza natural (no Dijon)
• 1 cdta de miel de abejas
• 1/2 cebolla blanca picadita
• 1/2 diente de ajo picado
• sal y pimienta al gusto
Mezclan todo muy bien y lo untan de base en el wrap integral 😉

My trip to NYC has been a food extravaganza, but one of the highlights of the trip was the new Viet-Cajun Pho at @phobarnyc . This fusion dish has fresh crawfish and heads-on shrimp in a perfectly spicy seafood broth. 👅💦
We also loved the New Orleans Bahn Mi and Classic Pho made with their famous 25 hour ‘Crazy Rich Broth’. 🍜
Also, hats off to the girls who can pull off that noodle slurp with ease! I am NOT ONE OF THEM. 😂 The secret to my success is perseverance and a patient photographer like @samanthasilvas. See how many tries it takes me to get that one shot you end up seeing? 😭😂

Hey peeps! 🙋🏻♀️ It's another #turmerictuesday and I had a blast cooking this one. It just so happened that my husband was reminiscing fondly about my chick'n tikka masala last night, which uses a substantial quantity of turmeric, so I surprised him with this dinner today! 🤗
Indian cuisine is one of my absolute favorites and while I am by no means a pro, I deeply enjoy making Indian recipes. What cuisine do you particularly enjoy cooking?
I created the sauce for this vegan chick'n tikka masala, but was too lazy to make my own seitan for the chick'n so I just toasted @gardein chick'n pieces then tossed them in my sauce. I also made sprouted spelt and rye flour naan for dipping purposes 🥰 and a mint cucumber dip that I forgot to photograph. 😅 Such a memorable and fantastic dinner, even though it took a while! ⏳
INGREDIENTS FOR THE SAUCE⤵️
🔹1 medium red onion chopped
🔹2 cloves garlic minced
🔹1 tbsp ginger grated
🔹5-6 dried curry leaves
🔹3 cardamom pods
🔹1 tsp coriander seeds
🔹1 tsp cumin seeds
🔹1 tsp fenugreek
🔹1½ tsp turmeric
🔹1½ tsp garam masala
🔹1 tsp ground mustard
🔹1 stick of cinnamon
🔹1½ cups to, diced
🔹3 tbsp tomato paste
🔹3 cayenne pepper, diced
🔹Juice of ½ lemon
🔹2 tbsp cane sugar
🔹⅓ cup Greek or non-dairy yogurt
🔹2 tbsp coconut/olive oil or ghee
🔹Start by heating up 2 tbsp oil/ghee in a pot. Add onion and saute for a couple of minutes on medium heat, then add the garlic and ginger and sautee another minute.
🔹Add all your spices aside from the cinnamon stick. Saute for a couple of minutes, stirring frequently, until spices are fragrant.
🔹Add the tomatoes and cayenne, stir then cover and simmer for 5-10 minutes.
🔹Turn off heat. Using a spoon fish out the curry leaves and cardamom pods then discard. Pour the sauce into a blender and blitz till smooth.
🔹Pour the processed sauce back into the pot. Add 1 cup water, the lemon juice, sugar, cinnamon stick and yogurt. Stir to combine and simmer for 10 minutes, until thickened and really until you're happy with the consistency.
🔹Discard the cinnamon stick, stir in your chick'n to coat and enjoy. 👍

Feeling a little homesick and craving comfort food. Meatloaf is always a hit in my household so, I made a BBQ Glazed Turkey Meatloaf with Pimento Cheese, Roasted Potato, Broccoli, and Cauliflower. Served it with some Lemony Kale. Didn’t have any bread crumbs though. This may sound a little Cutthroat Kitchen like, but the extended stay hotel I’m in serves packets of instant grits as part of their breakfast. Grabbed a couple (Cheddar Cheese and Country Bacon to be exact) and used them instead. Provided nice seasoning too. Improvise. Adapt. Overcome.

[ roast-ess with the mostest ] ... maybe i’m in denial about the 110°+ summer temps here in our Wonder Valley home, because why else would i turn on my oven to cook dinner lol 😂🥵 ... but, my secret is we have slick new mini-split AC units that really cool things down in here quickly, effectively and efficiently 🤫🥶 ... haven’t christened our new home with a weekend roast yet, so what better way to start than this weekend as my love @paddythesnake and i are deep in preparation to (legally) roast our former wicked landlady in small claims court on Monday *glung glung* aka Law & Order gavel of justice sound effect 😆 ...
garlic lemon 🍋 roasted chicken (drumstick and thigh cut plated here) ... served with cheddar scallion polenta (yup, that was also in my last food post, but as I’ve pointed out before, this is real life, mostly real-time home cooking so there will be repeats and staples!) ... chili crisp oil asparagus, lightly charred in our @lodgecastiron skillet 🍳 ... and the onions, carrots and shallots that roasted under the whole chicken, which cooked down in divine chicken and butter drippings ... the jus of this roast was so divine I poured it over everything once plated (even my veggie plate version sans chicken) ... #FATPAT approved 😋🐽👍🏼💯 ...
