Spending the weekend in Boston and finally took my new favorite workout @barrysbootcamp 💪🏼🤗 I left class dripping sweat and felt accomplished AF👏🏼 As a former athlete, I can say I’m always looking for a motivating and intense “bootcamp” like workout. Barry’s is just that AND it’s for EVERYONE, no matter what your athletic ability may be! The instructors push you to your limits and will hold you accountable, which I love! ✨Healthy Peanut Butter & Jelly Banana Bread✨
- 3 overripe bananas (sweeter the better)
- 2 eggs (I use @vitalfarms)
- 1 tbsp vanilla extract
- 1 cup Almond Flour
- 1/2 cup Peanut Butter
- 2 tbsp chia seeds
- 2 tbsp almond milk
- 3 tbsp honey or maple syrup
- 1/4 tsp salt
- 1 tsp baking powder
- Optional: 1 scoop @vitalproteins collagen
- 1/2 cup of your favorite jam, divided (I use my homemade healthy strawberry jam)
- More peanut butter for topping

Directions: Preheat oven to 350 degrees. Combine all ingredients in a bowl except the jam! Line a bread loaf pan with parchment paper and pour the mixture in the pan. Top with 1/4 cup of your favorite jam and swirl. Bake for 35-38 min or until the edges are golden brown! Let the load cool. - 2 cups fresh basil
- 3 tbsp toasted pine nuts
- 1/4 cup grated Parmigiano-Reggiano cheese
- 1 fresh garlic clove
- 1 to 1 1/2 cups extra virgin olive oil
- Salt and pepper to taste .

✨Healthy Paleo Blueberry Crumb Bars✨

✨Crust Ingredients✨
- 1 1/2 cup almond flour
- 1 cup coconut flour
- 1/4 cup coconut sugar
- 2 tbsp honey (or maple syrup)
- 3-4 tbsp unsweetened almond milk
- 1 tsp vanilla extract
- 1/3 cup melted coconut oil
- 1 tsp sea salt
- 1/2 tsp baking powder.

. ✨Blueberry Jam Ingredients✨
- 2 cups fresh blueberries
- 1 tbsp honey
- 1 tbsp lemon juice
- 1 tbsp tapioca starch (or cornstarch)
- 2 tbsp chia seeds .

Directions: Preheat oven to 350 degrees.

For the filling: place blueberries in a small pot over medium heat, add the rest of the filling ingredients then stir to combine. Bring to a boil, stirring constantly, then lower the heat to a simmer. Smash the blueberries with a fork and continue to simmer until thickened. Remove from heat, transfer to a bowl and refrigerate until ready to use.

For the crust: combine all ingredients for the crust in a bowl and combine until the dough forms. The dough should easily stick together, yet still be a little crumbly. Line an 8x8 baking dish with parchment paper and press 2/3 of the dough into the pan to create your base layer. Bake for 15 minutes. Take out the oven and evenly spread the blueberry jam. Finally, use the remaining dough and crumble on top of the jam. I like to create big crumbs, just like the bakery does! Bake for 30 minutes or until the top is golden brown! Raise your hand if you love to SLEEP!🙋🏼‍♀️ Now, raise your hand if you love waking up early!!!! Ok...I’m assuming not everyone, just me???😂 I know it can be tough to wake up before work and get to your workout, but I have just a few tips on how you can become a morning person too! Believe me, I wasn’t always an early riser! I’ve found that waking up early has truly been the most rewarding change I’ve made in my life! Give it a few weeks and I promise waking up early will become second nature and you’ll feel SO productive!.

✨1. Put your phone down at night! I try and put my phone down around 9:30 pm (it’s tough but worth it🥰) and literally charge it on the OTHER SIDE OF MY ROOM HAHA! I swear by this!.

. ✨2. Place your alarm/phone in a spot where you have to get up to turn it off. This way you’ll be forced to stand up and get going! I suggest setting 2 alarms too!.

. ✨3. Layout your workout clothes the night before! I’m always more motivated when I wear a cute matching set😉.

✨4. Find a workout you actually will look forward to, with an instructor you love! I know it sounds a little crazy, but booking a class you have to pay for holds you accountable! Cancellation fees....ain’t no body got time for that👋🏼🙅🏼‍♀️ If you’re not looking to spend a lot, a suggest a jog/run outside! You’ll really appreciate this during the summer❤️.

✨5. Drink some caffeine before your workout, this will give you that BOOST of energy you need👌🏼.

✨6. Keep consistent, take baby steps first, and before you know it...this will become part of your daily routine. Don’t make drastic changes at first, start by slowly waking up 30 minutes earlier than usual, do this gradually until you hit your goal! I’m always here if you need motivation🙋🏼‍♀️.

✨7. TREAT YO SELF! Getting up early is hard! Whether it’s treating yourself to a smoothie or coming home to healthy breakfast...treat yourself!🍓.

• 1 scoop vanilla protein powder (she used plant based @ripplefoods)
• 1 scoop @vitalproteins collagen
• 1 organic egg
• 1 tbsp pure vanilla bean
• 1 tsp cinnamon
• 1/2 tsp baking powder
• 1/2 cup Hu Gems Chocolate Chips (save some for topping!)
• Optional: 2 tbsp of honey or maple syrup.

Directions:
✅ Preheat your oven to 400 degrees.
✅ Toss all the ingredients except the chocolate chips in your blender and blend until smooth and fluffy.

✨Healthy Chicken Stir-Fry (Paleo/GF)✨
- 1 lb organic chicken breast
- 1/4 cup low sodium soy sauce (I use @kikkomanusa gluten free)
- 1/2 cup chicken broth (low sodium)
- 1 tsp minced garlic
- 1 tbsp local honey - 1 tbsp tapioca starch (or cornstarch)
- green onion, chopped
- sesame seeds
- 1 cup shiitake mushrooms
- 1/4 cup water chestnuts

Directions: To make the sauce, add the soy sauce, chicken broth, garlic, honey, cornstarch in a bowl and whisk together. Cut the chicken into cubes and marinate with half of the sauce for 10 minutes. In a large saucepan, melt 1 tsp ghee and sauté shiitake mushrooms and water chestnuts for 5 minutes. Set aside. Melt 1 tsp of ghee and cook the chicken. Add the shiitake/water chestnut mixture and add the rest of the reserved sauce. Let cook until the sauce has thickened. Garnish with sesame seeds and green onion! Perks of this heat wave - if you take your cookies outside, the chocolate will perfectly melt for the most delicious bite👏🏼🍫😂 Hope you’re all surviving out there! I experimented with some of my @costco finds - specifically the amazing mixed nut butter we bought yesterday! I love the consistency of this nut butter. The addition of the pumpkin, chia and flax seeds makes this nutritious and perfectly crunchy. Plus, it was also only $8!!!🥳 I made @poosh’s gluten free, dairy free peanut butter chocolate chip cookies, but subbed PB for the mixed nut butter and these were DELICIOUS!🍪😋 These healthy cookies are SO chewy and filled with minimal, clean ingredients! I even added a scoop of @vitalproteins collagen! - 1 cup natural peanut butter
- 1/4 cup local honey
- 1 tsp vanilla extract
- 1/4 tsp sea salt

- Melt 1 bar @hukitchen - Unsweetened shredded coconut.

Combine all ingredients in a bowl, take 1 tbsp of the dough and roll into a ball. Once you have created all the dough balls, place in the freezer for 15 minutes. As you wait, melt the chocolate for the drizzle. Dip the truffles in chocolate and top off with the coconut. - 1 cup natural peanut butter
- 1/3 cup coconut flour
- 1/4 cup local honey - 1 tsp vanilla extract
- 1/4 tsp sea salt - 2-3 scoops @vitalproteins vanilla collagen creamer - 1/3 cup dark chocolate chips (I use @enjoylifefoods - dairy free!).

Directions: Line an 8x8 baking dish with parchment paper. By the way, if you don’t have collagen, you can substitute with vanilla protein powder! Combine all ingredients in a bowl, if the batter isn’t thick enough feel free to add and additional 1-2 tbsp of coconut flour! Press the dough evenly into the dish and refrigerate overnight (or 6-8 hours). This should make around 6-8 bars, depending on how you cut them. - 2 cups fresh basil - 3 tbsp toasted pine nuts
- 1/4 cup grated Parmigiano-Reggiano cheese
- 1 fresh garlic clove
- 1 to 1 1/2 cups extra virgin olive oil
- Salt and pepper to taste .

Directions: In a food processor, combine the basil, pine nuts, cheese and garlic and pulse until ground a fine paste. ✨Paleo Crumble✨
- 1 1/2 cups Rolled Oats (GF)
- 1 cup Almond Flour
- 1/3 cup Coconut Oil
- 1/4 cup local Honey (or maple syrup)
- 2 tbsp coconut sugar - 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/4 tsp sea salt.

✨Peach Filling✨
- 3 ripe peaches, sliced
- 1 1/2 tbsp arrowroot powder (or cornstarch) - 1 tbsp fresh lemon juice
- 1 tsp vanilla extract
- 1/2 tsp cinnamon .

Directions: Preheat your oven to 350 degrees. Line an 8x8 baking pan with parchment paper. Combine all ingredients for the crumble until combined. Press half the crumble into the baking dish and bake for 8-10 minutes. Next, combine all the ingredients for the peach filling, toss until completely coated. Take out the crumble and let cool for 5 minutes. Pour the peach filling over the crumble and evenly distribute. Top with the remaining crumble and bake for 25-30 minutes, or until the top is golden brown! Enjoy on it’s own or top with ice cream or coconut whipped cream! - 1/4 cup coconut sugar
- 1/4 cup nut butter (I used almond butter)
- 1/4 cup honey or maple syrup

- 1 melted @hukitchen chocolate bar
- 2 eggs
- 1/4 cup almond flour
- 1 tbsp vanilla extract
- 1/4 tsp baking powder
- 1/4 tsp sea salt - More chocolate chunks to mix in! 
Directions: Preheat oven to 350 degrees. Melted 1 chocolate bar (I use @hukitchen but feel free to use your favorite) in the microwave in 30 second increments. Combine all ingredients in a bowl and fold in the chocolate chunks. Pour the batter into an 8x8 pan lined with parchment paper. Bake for 35-38 minutes or until edges are golden. Homemade NICE CREAM!🍨🍌 This nice cream is the perfect healthy summer treat! With only a few healthy ingredients, this is dairy-free, vegan and ready in just a few minutes! I topped mine with one of my healthy cookie dough bites and some more chocolate chips! It’s my heathy version of cookie dough ice cream😋 You have to try this out! ✨THE ULTIMATE NICE CREAM✨
- 4 cups frozen sliced bananas
- 1/4 cup nut butter (I used cashew butter)
- 1 tsp vanilla extract
- 1/4 cup unsweetened almond milk (I use @califiafarms) 
Additional Mix Ins: Chocolate Chips, my Healthy Cookie Dough Bites, Coconut Flakes, Fruit, the options are ENDLESS!

Directions: blend all the ingredients except any toppings in your blender until thick and smooth. Feel free to add more almond milk if needed, I suggest adding 1 tbsp at a time! Stop and scrape down the sides of the blender a few times while in the process blending. I find my @vitamix to work best! After you are finished blending, mix in your chocolate chips! Serve immediately for soft serve or transfer to a Tupperware or ice cream container to keep in the freezer! Don’t forget to serve with more toppings😋 #healthwithvictoria #nicecream #healthyrecipe

Chocolate Chia Seed Pudding (Serves 2)
- 1/3 cup chia seeds
- 2 cup unsweetened almond milk (I use @califiafarms unsweetened vanilla)
- 1/4 cup cacao powder - 1/2 tsp vanilla extract
- Optional: 1 tbsp of maple syrup.

Directions: Start by mixing the cacao powder, vanilla extract and maple syrup in a bowl. Next, add the almond milk and combine. Finally, add the chia seeds and mix very well to ensure there are no clumps. Let sit overnight and enjoy! - 3 overripe bananas (browner the better!)
- 1 cup nut butter (I used 1/2 cup peanut butter, 1/2 cup almond butter)
- 1/4 cup almond flour (I buy @traderjoes)
- 1 organic egg (I buy @vitalfarms)
- 1 tbsp vanilla extract
- 1 tsp cinnamon - 1/2 tsp baking powder - 1/2 cup chocolate chips (I use @enjoylifefoods, save some for topping!)
- Optional: 2 tbsp of honey or maple syrup.

Directions: Preheat your oven to 400 degrees. Toss all the ingredients except the chocolate chips in your blender and blend until smooth and fluffy. If the batter is warm, let sit for a few minutes until cool. Stir 1/4 cup of your chocolate chips into the batter. Line your muffin tin and divide the batter amongst the prepared muffin cups, filling each no more than 3/4 of the way to the top. Sprinkle each muffin with the remaining 1/4 cup of chocolate chips. Bake for about 15 minutes, until the tops of the muffins are golden brown and set. Place on a wire rack and let the muffins cool in the pan for 10 minutes. After some (...a lot) of trial and error, I finally nailed it! I’m extremely excited to share with you...the PERFECT Paleo Chocolate Chip Cookie!🍪 No grains or gluten, no dairy, no refined sugar and you only need 1 bowl! . ✨The Perfect Paleo Chocolate Chip Cookie✨
- 1/4 cup solid (but softened) organic coconut oil
- 1/4 cup coconut sugar
- 1 tbsp Agave @intheraw - 1/4 cup nut butter (I use cashew)
- 1 @vitalfarms organic egg
- 1 tsp vanilla extract
- 1 cup almond flour (I get mine @traderjoes)
- 1/4 cup coconut flour
- 1 tsp baking soda
- 1/4 tsp salt - 1 cup of chocolate chips (I used @enjoylifefoods).

Directions: Preheat oven to 350 degrees. Combine all ingredients in a bowl. Save some chocolate chips for topping! Once combined, make sure you refrigerate the dough for at least 30 minutes, do not skip this step! The coconut oil needs to solidify with the rest of the ingredients! I like to scoop my cookies individually and then place in the fridge! Place the cookie dough on a baking sheet, 2” apart to make around 16 cookies. Note I use a small cookie scoop! Slightly flatten each ball of dough with your fingertips. Bake for 10-12 minutes or until the cookies puff up and appear set in the center. Remove from the oven and press extra chocolate chips on the top, let sit for 5-10 minutes and ENJOY! Happy Friday!!!🎉 I have the perfect quick & healthy recipe for you to make this weekend!💞 My healthy chocolate chip banana muffins! I am so excited to spend my weekend on the beach with my family and friends, eating some of these muffins of course! For these muffins, all you need is a few ingredients you probably already have on hand right now and a blender🤩 Check out my recipe below!.

. ✨Chocolate Chip Banana Blender Muffins✨
- 3 overripe bananas (browner the better!)
- 1 cup nut butter (I used 1/2 cup peanut butter, 1/2 cup almond butter)
- 1/4 cup almond flour (I buy @traderjoes)
- 1 organic egg (I buy @vitalfarms)
- 1 tbsp vanilla extract
- 1 tsp cinnamon - 1/2 tsp baking powder - 1/2 cup chocolate chips (I use @enjoylifefoods, save some for topping!)
- Optional: 2 tbsp of honey or maple syrup.

Directions: Preheat your oven to 400 degrees. Toss all the ingredients except the chocolate chips in your blender and blend until smooth and fluffy. If the batter is warm, let sit for a few minutes until cool. Stir 1/4 cup of your chocolate chips into the batter. Line your muffin tin and divide the batter amongst the prepared muffin cups, filling each no more than 3/4 of the way to the top. Sprinkle each muffin with the remaining 1/4 cup of chocolate chips. Bake for about 15 minutes, until the tops of the muffins are golden brown and set. Place on a wire rack and let the muffins cool in the pan for 10 minutes. Warm chocolate chip cookies have always been one of my all time favorite desserts!🥰 For the longest time, I’ve struggled with finding a soft, gooey paleo chocolate chip cookie recipe! After some (...a lot) of trial and error, I finally nailed it! I’m extremely excited to share with you...the PERFECT Paleo Chocolate Chip Cookie!🍪 No grains or gluten, no dairy, no refined sugar and you only need 1 bowl! These are the BEST slightly cooled, right out of the oven! Have a great start to your week everyone💞.

. ✨The Perfect Paleo Chocolate Chip Cookie✨
- 1/4 cup solid (but softened) organic coconut oil
- 1/4 cup coconut sugar
- 1 tbsp Agave @intheraw - 1/4 cup nut butter (I use cashew)
- 1 @vitalfarms organic egg
- 1 tsp vanilla extract
- 1 cup almond flour (I get mine @traderjoes)
- 1/4 cup coconut flour
- 1 tsp baking soda
- 1/4 tsp salt - 1 cup of chocolate chips (I used @enjoylifefoods).

Directions: Preheat oven to 350 degrees. Combine all ingredients in a bowl. Save some chocolate chips for topping! Once combined, make sure you refrigerate the dough for at least 30 minutes, do not skip this step! The coconut oil needs to solidify with the rest of the ingredients! I like to scoop my cookies individually and then place in the fridge! Place the cookie dough on a baking sheet, 2” apart to make around 16 cookies. Note I use a small cookie scoop! Slightly flatten each ball of dough with your fingertips. Bake for 10-12 minutes or until the cookies puff up and appear set in the center. Remove from the oven and press extra chocolate chips on the top, let sit for 5-10 minutes and ENJOY! 🍃Homemade Pesto🍃
- 2 cups fresh basil
- 3 tbsp toasted pine nuts
- 1/4 cup grated Parmigiano-Reggiano cheese
- 1 fresh garlic clove
- 1 to 1 1/2 cups extra virgin olive oil
- Salt and pepper to taste .

Directions: In a food processor, combine the basil, pine nuts, cheese and garlic and pulse until ground a fine paste. With the machine running slowly, drizzle the olive oil until desired consistency is reached. Season with salt and pepper. ENJOY❤️ #healthwithvictoria #pesto #glutenfree

They are dairy free & gluten free, I used @poosh gluten free, dairy free peanut butter chocolate chip cookies recipe, but I used the mixed nut butter from Costco instead of PB and added a scoop of @vitalproteins collagen! ✨Healthy Paleo Blueberry Crumb Bars✨

✨Crust Ingredients✨
- 1 1/2 cup almond flour
- 1 cup coconut flour
- 1/4 cup coconut sugar
- 2 tbsp honey (or maple syrup)
- 3-4 tbsp unsweetened almond milk
- 1 tsp vanilla extract
- 1/3 cup melted coconut oil
- 1 tsp sea salt
- 1/2 tsp baking powder.

. ✨Blueberry Jam Ingredients✨
- 2 cups fresh blueberries
- 1 tbsp honey
- 1 tbsp lemon juice
- 1 tbsp tapioca starch (or cornstarch)
- 2 tbsp chia seeds .

Directions: Preheat oven to 350 degrees.

For the filling: place blueberries in a small pot over medium heat, add the rest of the filling ingredients then stir to combine. Bring to a boil, stirring constantly, then lower the heat to a simmer. Smash the blueberries with a fork and continue to simmer until thickened. Remove from heat, transfer to a bowl and refrigerate until ready to use.

For the crust: combine all ingredients for the crust in a bowl and combine until the dough forms. The dough should easily stick together, yet still be a little crumbly. Line an 8x8 baking dish with parchment paper and press 2/3 of the dough into the pan to create your base layer. Bake for 15 minutes. Take out the oven and evenly spread the blueberry jam. Finally, use the remaining dough and crumble on top of the jam. I like to create big crumbs, just like the bakery does! Bake for 30 minutes or until the top is golden brown! I like to stick these in the fridge for a few hours to set, then cut them into squares. ENJOY❤️ #healthwithvictoria #blueberry #farmersmarket #summerrecipes
