My gym has always had these giant fit looking people on their walls. When I first started working out, they intimidated me. I would stare at them while I worked out and wonder if I would ever look like them. Well, this new gym has this FIFTEEN FOOT TALL giant woman in the cardio room. She will probably be a common feature in a lot of my videos because she is soooo big I can’t find an angle in the room that you can’t see her. These images no long intimidate me though. I like them. 🥘 Creamy Polenta with Spinach, Mushrooms and Seitan 😋 .
💥 Save this one! 💥 🌱 It’s a winner winner VEGAN dinner!!! Seriously- it’s all vegan but so so delicious, whether you’re a mostly-plants-eater or not. My husband REQUESTS this. So... make it. Today if possible. (Also you could easily sub the seitan for tofu, a fake-meat product you like, or just more veggies- however it will change the nutritional info for this recipe). Also, did I mention it’s QUICK and EASY?! You can pull it together in 20 minutes tops. 🤚🏿 Let’s go!
1 cup cornmeal/polenta (they’re the same thing)
1/2 can coconut milk
1-2 tbsp nutritional yeast (technically optional but you’ll knock the flavor down by a few points)
1-2 tsp veg bouillon and 1.5 c water (or 1.5 c veg broth)
1 package mushrooms, cut
Spinach... as much as you want
120ish grams seitan (I used pre-seasoned medallions)
1-3 tsp soy sauce
1 tsp olive oil
Salt/pepper to taste .
In one pan, sauté onions and garlic until mostly cooked; add mushrooms and spinach and cook until... well..cooked. Add seitan and soy sauce and cook another 2-5 minutes.
In a separate pot cook polenta with water/veg bouillon/broth, nutritional yeast and coconut milk. Simmer until thick; add water to reach desired consistency. Taste test and add salt/pepper as desired.
Serve mushroom mixture over polenta .
🍄 This recipe serves 3- you could easily double or triple this recipe for a GREAT quick and easy meal prep! Enjoy and let me know if you try it!

Wow, I just had such a great vacation - loads of time to relax and think about stuff and pause for a minute. Let me just say, it cleared my mind so much that it left me with new space in my mind for new emotions, challenges and goals.

Another pic from yesterday evening.. Although it wasn’t terribly far out of the city, just a couple miles, it was nice to be out in nature. The last fifteen or so minutes of our hike was a flatter path (the first part of the hike was literally climbing up the face of the mountain) there were pine trees and the air just smelled so fresh and new, more like back home.🌲 We also got some footage on the GoPro and one of the weirdest things was the hundreds of crows that flew over us at sunset heading towards the ocean.🤔🤔
Tomorrow is a special day for us, so be prepared for a mushy post.😉❤️
