I always lightly process my sprouts before folding them into the dough - but this time I wanted to add them whole 🌾 I used 20% sprouted Kamut berries here along with 25% white Kamut flour. One thing that I found really interesting was that, while grinding up the sprouts before adding to the dough leads to a much more powerful, faster fermentation, adding them *whole* as I did here did not seem to affect the ferment. The process of sprouting involves the activation of enzymes in the grain which allow the berry to sprout. Grinding them up appears to be necessary to release these enzymes into the dough to affect the fermentation 👍

Yes it’s still hot, Why yes i am indeed burning my hand. 🥵 this one i probably my most successful crumb so far, even if i had a shitload of doubts 😥 i’ve only started my Soudough journey a few months ago, and i think i need more time and confidence. This boiiii is all Bread flour at 80 % H with Alfalfa sprouts blended in the dough.

Let me tell you a story about our Jamaican Hard Dough bread. I can laugh now because it has been 6 months and the wound isn't too fresh. Ha!
So the 1st Saturday we were open in Eatonville, I made 40 loaves of bread for sammiches. I congratulated myself on a job well done and went around patting my shoulder especially since the @kitchenaidusa mixer I was using only kneaded 2 loaves of bread at a time. Daaaahling, that's a lot of work to do that 20 times!
Anywho, we opened at 11am for brunch and YOU were there. In punishingly awesome long lines, you were there. By 2pm, a mere 3 hours after opening, we were out of bread. 40 loaves - gone! We still had 6 more hours in the shift. Aye child, I was trau-ma-tized. Trau-ma-where- did-40-loaves-go-tized. Never again!
So, here's what we learned:
1. Though man shall not live by bread alone, it's not altogether a terrible way to exist, it seems.
2. 40 loaves on a Saturday is cute. Ha!
3. You guys are awesome.
4. You love our bread
Here's how we fixed it:
1. We bought an industrial mixer that kneads 20 loaves at a time. TWEEEEEENTY.
2. We no longer underestimate the almighty power of the dough.
What's the take-away?
1. We have bread on top of bread on top of bread. Knock on wood and all mystic things, we shall never run out of bread.
2. Our buttery soft bread is perfect in our sammiches, divine as garlic toast, and darn near illegal in French toast.

So this new artisan bread flavour started - jalapeños and cheddar sourdough. The process of the sourdough right before our eyes. Starting as a dough fermenting gently in its banneton awaiting the daily bake. The basket wicking away the moisture from these very wet doughs. Love the old way, the only way and getting back to where bread started.
Estourar na pia uma cerveja antes de colocar na geladeira é um bom sinal.

Cor: amarelo âmbar, turva.
Opinião: com baixa fermentação e amargor (IBU 15), ressalta-se o aroma cítrico somado com capim e cevada. Próxima a uma IPA. Baixa potência alcoólica.
Resumindo, ainda há gosto de cerveja em uma lager.
