3 tbs thick greek or coconut yogurt
2 tbs extra virgin olive oil
3 tbs apple cider vinegar
Juice of half a lemon
1 small garlic clove, finely grated or crushed
1/2 cup fresh basil leaves
1/2 cup fresh parsley leaves
Generous pinch of sea salt
Blend together until smooth. Store in the fridge in an airtight jar or container 👍🏻❤️

So how long do cut microgreens really hold up? Vendor at farmers market today said 2 weeks ... hmmm. Not my experience. After some reading trying a new test. Just cut homegrown Kale microgreens (yummy) unwashed and placed on a damp paper towel to keep some humidity. Cover for glass bowl not shown, and greens now in 4C fridge. Let’s see how they look and taste in the coming days.

I made Energy Balls for anyone who attended fitness classes on Valentines Day night! And I must say, baking isn’t really a thing I do, so these are a non-bake option that I can make for people that are #deliciousandnutritious! The primary reason I don’t love baking is that I feel too much precision is required, and the possibility of messing up flavours or consistency pretty majorly by adding things for health benefits, or taking important ingredients out, is high. .
On Friday someone asked me if I knew the macronutrient breakdown of the energy balls and I just laughed 😂 I had a recipe out when I started making them, and then wanted to add 5 ingredients (greens, protein, hemp hearts, flax meal, and dried cranberries) that the recipe didn’t call for, so I did, and then just increased my primary wet ingredient, Peanut Butter. .
I was happy to hear very positive feedback on these ones, and sad for those who asked, but 4 people even asked for the recipe! 😂
Cooking I love, because I can adjust ratios and ingredients all over the place, and think the likelihood of a colossal failure is small. Who else is like me? Cooking > baking .

Sautéed garlic green beans, anyone?! 🥰 you know you want them! When my client requested green beans, I got excited because it was the perfect opportunity for me to come up with an easy & simple recipe for you babes since I don’t make them that often for myself! (Tots making this recipe BTW 🤤).
Green beans are a great source of fibre, potassium & folate, a good source of plant based protein, iron & zinc & also contain antioxidants similar to those in green tea/matcha (catechins), which help with heart health, blood sugar control & hemp fight common diseases. They also provide a good dose of vitamin C for collagen synthesis, skin health & immunity.
Serve these as a side dish with some lean protein, throw them into a bowl or salad or eat them as is!
2 lb. of green beans
5 cloves garlic, minced
Juice from a fresh lemon
Sea salt & black pepper to taste
Avocado oil spray
1.5 tbsp. minced onion
Splash of yacon or maple syrup
Add all the ingredients to a large skillet & toss to coat. Spray with avocado oil. Heat the skillet over medium-high heat & sauté the green beans for about 10-12 minutes until cooked through, dark green but still crispy!
Remove from the heat & enjoy! 😘
