Craving a spread like this right about now. In my kids eyes, I’m best known for my “snack attack” skills. Lunch is often simple in our house and you’ll find us gathered around our table picking, dipping and chipping it up. It doesn’t always look this pretty but it’s always colorful and simple. It’s Functional for a family our size 🤪 I want my kids to know that food is fuel, food is fun and it’s pretty just the way it is.
So I am super curious what everyone does when they're doing their job or their main focus! I have so many extra hobbies that don't involve fitness, personal training, or college. I absolutely love knitting and plants. Here I am showing a square I am working g on for a giant knit throw blanket and this is my Parlour Palm, Pamela. I also love to hike, fish, play with my dogs and to read inspiring books. (Let me know if you have any suggestions) so what do y'all love doing?!

Oh hey weekend! We started early getting to @flipoutchichester for 9am when its super quiet. Poppy absolutely loved it! Shes always asking for "bounce bounce" at the moment! We had a lazy lunch time at home (where I managed to nap for the 3rd day in a row!!) And then me and pops headed out for a girls afternoon/evening with some old work friends. Sam is still unwell and we still don't know why but he's managed a short trip outside and rested while me and pops played #countingourblessings#family
Y5, Month 2, Day 16: Balance. If anyone knew the secret to a balanced life, it was Scott. I'm so grateful that school & lacrosse brought him and his amazing family into my family's lives. Spinach stuffed chicken breasts. Im not a fan of chicken breasts per say, I am more of a juicy thigh girl and love cooking chicken thighs but chicken breasts are made often in our home. One thing I do love about them is, because they are just "eh" by themselves, there are sooooooo many things you can do with them. The possibilities are endless. One of those things is stuffing them. I had spinach I needed to use before it went bad so today it was spinach. It is a HUGE myth that healthy eating is bland and boring. I don't make things again if I do not like how they taste. And I REALLY don't make things again if my husband does not like how they taste. To be put in rotation in this house, it MUST be enjoyable to eat. I don't think you should force yourself to eat something JUST because it is "healthy". That can breed an unhealthy relationship with food. Don't be afraid to try new things. If you don't like how it turns out, try preparing it a different way next time before you write it off completely. Variety is key in getting multiple nutrients. Just because you don't like something, does not always mean you don't like that food, it could just be how it was prepared. Experiment.
A follow up to Chase’s “let’s keep it simple” Valentine’s Day cards... here is the end result! Instead of writing “love” we added a little heart by his name. It blows my mind that my 4-year old has such strong opinions about everything. It also makes me happy that he shares his thoughts and opinions because I become a better mom when I learn how to nurture who he is. Parenthood is beautiful and difficult all at the same time. One of my wonderful challenges is learning who my child is and then helping him grow rather than me choosing and pushing him into the direction that I want. Believe me, we don’t agree at times on what he wants and what I think should happen but we show respect to one another by allowing our voices to be heard and holding space for one another’s opinions. And that makes me happy because raising a child who is secure in who he is, understands how to love and respect and feels heard in this world is exactly where I want to be at these days.
