Potato Patties (7 patties)
4 boiled potatoes, skin removed and mashed
1 onion, diced
1 cup frozen peas, corn, and carrot mix
1/3 green capsicum diced
1/3 red capsicum diced
2 button mushrooms diced
Cold-pressed extra-virgin olive oil for brushing potato
Wholemeal flour to coat patties
Mix all vegetables together and form 7 patties by hand. Brush with oil and coat patties with wholemeal flour on both sides. Line tray with baking paper and transfer patties to tray. Place in oven at 200 C for 40 minutes, turning at halfway point.
Served with basmati rice, “cheesy” cauliflower and broccoli, and salad (4 leaf, lettuce, carrot, avocado, grape tomato, and snow peas).

You can also add mashed and cooked chickpeas to the potato patties or whole chickpeas in the salad.
